🌶 Wasteland Turkey Chili
One-Pot Turkey Chili • Pinto Beans
When the nights get cold and the horde gets restless, you want something in a deep pot that bubbles for a while and feeds you for days. This chili is lean turkey, beans, and tomatoes with real heat — high protein, high fiber, and it reheats like a dream for tomorrow's rations.
⚗ Required Supplies:
- 1 lb ground turkey
- 1 can (10 oz) diced tomatoes with green chiles
- 1 cup cooked pinto beans (from about ⅓ cup dried beans, soaked overnight — or canned)
- 2 tsp chili powder
- 1 tsp ground cumin
- 1 tsp onion powder
- ½ tsp garlic powder
- ½ tsp salt
- 1 Tbsp olive oil
🔧 Preparation Protocol:
STEP 1: If using dried beans: soak ⅓ cup dried pinto beans in plenty of water overnight, then simmer until tender (about 1 hour) and drain. Do this ahead — everything else takes 30 minutes.
STEP 2: Heat the oil in a large pot over medium-high heat. Add the turkey and break it apart as it cooks, about 6–8 minutes, until no pink remains.
STEP 3: Stir in the chili powder, cumin, onion powder, garlic powder, and salt. Cook 1 minute, stirring — this wakes the spices up.
STEP 4: Add the tomatoes with their juice and the cooked beans. Bring to a simmer, then turn the heat low, cover, and cook 20 minutes, stirring once or twice.
STEP 5: Done when it's thick and the turkey reads 165°F on a thermometer. Taste and add more salt or chili powder if you want. Refrigerate leftovers within 2 hours — it tastes even better the next day.
⚠ SURVIVAL NOTE: Beans plus lean turkey means protein and fiber in every bowl, which keeps blood sugar steadier than a meat-only chili. One bowl is a full meal. Go easy on the honey if you like it sweet — a little goes a long way.
